That said it is very rarely necessary to change the owner as long as sufficient permissions are in place.

It is frequently that I (Admin) am presented exactly that catch 22,
i.e. rejection of attempts to change permissions.

Just because you are an administrator it does not follow that you will automatically have permission to access anything, you still need the permission.
Of course you can, as you have discovered, take ownership and give yourself pemission. This also applies to the TrustedInstaller, if you give that account the permissions it needs then you very likely don't need to also make it the owner.
The Owner of a resource will always have 'Full Control' permission even if that is not explicitly granted. You can think of Taking Ownership as a way of assigning yourself 'Full Control' permission, and similarly revoking ownership from an account will remove that account's 'Full Control' permission (unless it also has an explicit permission to the resource).
